The Farmington Rotary Club’s Vidalia Onion Sale has begun!

 
Surely you can use a bag or two of those sweet, delicious Georgia raised Vidalia’s and support the Children & Mothers of Safe Passage in Guatemala at the same time!
 
 
 
These onions come in 25# bags and your cost is $27.00 this year!  Once again this year, FRC will be selling ½ bags for $16.00!!!  Just send an email to Doug at dribar@myfairpoint.net with the number of bags you want to order and put "Vidalia Onions For Safe Passage" in the subject line of the email.  The deadline for placing orders is April 30, 2016 so don’t delay!  
 
You can prepay by sending a check (paid to the order of the Farmington Rotary Club) directly to: Farmington Rotary Club, P.O. Box 864, Farmington, ME 04938 or you can pay when you pick them up.
 
The onions will be arriving sometime in early May (details on delivery dates and times will be sent out the first week in May).  When available, onions will be picked up at WA Mitchell Fine Furniture, 710 Wilton Road in Farmington. 
 
Safe Passage in Guatemala is the sole beneficiary of all proceeds from this fundraising effort.

So y'all don't know what to do with all those fabulous onions??????  Try this!  It's a good ole southern recipe for a good ole southern onion and it is some kind of good!!
 
SWEET ONION CASSEROLE
 
½ cup unsalted butter
4 large Vidalia onions cut into rings
60 butter flavored crackers, crushed into crumbs (like Ritz or Town crackers)
8 oz sharp cheddar cheese shredded
3 large eggs
1 cup milk
Salt, pepper, and paprika to taste
 
Preheat oven to 350 degrees.  Using ¼ cup of the butter sauté the onion rings until soft.  Melt the other ¼ cup of butter and mix into the cracker crumbs.  Reserve ¼ cup of the buttered cracker crumbs for the top and spread the remaining crumbs into a greased 9 by 13 inch baking dish.  Spread the sautéed onions over the crackers and sprinkle the cheese over top of the onions.  Salt and pepper.  Beat the eggs and the milk together and pour over the cheese and onions.  Sprinkle the reserved crumbs over the top and season lightly with paprika.  Bake 35 to 40 minutes (until it sets).  Serves 8 to 10.
